Join me at the Just Food Conference ! I will be speaking alongside a number of innovators in the agricultural, food policy + justice, health and wellness space. My topic is Ayurvedic Seasonal Eating; I will be presenting on Sunday afternoon.
Seasonal eating is a major tenant of the Ayurvedic (holistic medical) sciences. In this class, we will learn about the fundamentals of Ayurvedic theory as a guide to understanding why it is important to eat seasonally to promote health within the body and mind. We will explore the ‘menu change’ that Mother Nature is 'serving' as we transition in NY from Winter into the Spring. Then, we will examine local Spring seasonal foods/herbs and discuss how these predominantly bitter and astringent ingredients support health, as well as how to incorporate them into home recipes.
