Kitchari is a staple food in India, the name of which translates to something like ‘mixture’ or ‘mess’. Because traditional kitchari is considered extremely easy to digest, it is used in Āyurveda to purify the digestive system, cleanse the body of toxins, thus helping to improve digestion, strengthen immunity, improve natural energy, and even boost cognitive function.

A traditional kitchari is made of a blend of basmati rice, split mung beans, and spices, though vegetables may be added at your discretion. If vegetables are added to kitchari, it becomes more like a stew and less of a ‘medicine’. Though food can be used medicinally, food is not medicine. Food is nutritive, it nourishes you and builds you. Medicine detoxifies you, increases elimination, and returns intelligence to your organism.
